So I tried to venture into wheat flour without a recipe, following my feeling. It made a fabulous wheat grain bread. Super soft and very nourishing, in addition to being very tasty!
This recipe can be made in the evening before bed to be cooked the next morning or even prepared in the morning or at noon to be cooked in the evening. There is no precise time rule, which is very very very family friendly!
You will need a dutch oven to make this bread
Can be frozen.
3 cups all-purpose wheat flour
1.5 cups all-purpose white flour
1/4 cup of steel cut oats
1/2 cup oats (oatmeal)
2 tablespoons of chia seeds
2 tablespoons of hemp seeds
1.5 teaspoon of brown sugar
1/2 teaspoon of salt
1 teaspoon instant dry yeast
3 cups of lukewarm water
In a large bowl, combine all the dry ingredients. Add the water and mix well using a wooden spoon or your hand (the hand is really more efficient at making sure all the flour is wet).
Cover the bowl with a damp cloth and let the dough rise in a warm place. You can put the dough in the oven, turned off, with the light on.
When the dough has doubled in size (about 5 hours later, but you can wait 12 hours without a problem), put the dutch oven in the oven and preheat it to 425F.
Meanwhile, lightly flour the top of your work surface. Place the dough on the flour. Knead for about ten seconds, just enough to coat all the dough in flour and form a ball.
Once the oven has reached 425F, take the dutch oven, place the dough in it, put the lid on and bake for 30 minutes. After 30 minutes, remove the lid and continue cooking for 20 minutes.
Will keep for about 3 to 4 days in a bread bag at room temperature.
