In the traditional split pea soup, there's salted pork belly or bacon that brings the smokiness and the saltiness to the soup. With its addition of smoked tofu, this pea soup will remind you of the sugar shack! Its high protein content makes it an excellent meal.
3 tablespoons of vegan margarine or vegetable oil
1 yellow onion, diced
1 block of smoked tofu, cut into thin squares
1/4 teaspoon liquid smoke
1 teaspoon of salt
Pepper to taste
3 bay leaves
1/2 teaspoon of dried savory
1 1/2 cups split yellow peas, rinsed (does not require soaking)
3 liters of unsalted vegetable broth
In a large pot, heat the margarine or oil over medium heat and stir in the onions. Once translucent, add the smoked tofu and liquid smoke. Cook, stirring, until browned. Add the seasonings and the peas, then coat the peas well. Add the broth, stir and bring to a boil. Reduce the heat to medium-low, put the lid on the pot leaving a little opening and let simmer for about 2 hours, until the peas are tender and the broth has reduced by a quarter.
