This comforting soup will be perfect to warm you and comfort your heart throughout the cold season. Its cheesy flavor and large pieces of broccoli is so nostalgic!
2.5 cups of broccoli florets
3 tablespoons of vegetable oil
1 small onion, diced
1 clove of garlic, minced
1.5 cups of chopped broccoli stalks
2 carrots, sliced
3 small potatoes, peeled, cubed
1/4 cup of white wine vinegar
1 liter of vegetable broth
1/4 teaspoon cayenne pepper (optional)
1/2 cup nutritional yeast
1 tablespoon of white miso
1/4 teaspoon ground turmeric
1/4 teaspoon liquid smoke
1/2 tablespoon of apple cider vinegar
1/2 tablespoon brown sugar
1 cup of soy milk
Steam the broccoli florets. Set aside.
In a large pot, heat the oil over medium heat and cook the onion. Once the onion is translucent, add the garlic and vegetables, except the florets. Mix. Deglaze with white wine vinegar and add the rest of the ingredients except the milk. Cook, covered, until the carrots are very tender.
Transfer the soup to the blender and mix on high power until a smooth mixture is obtained. Return the soup to the pot, add the soy milk and the broccoli florets.
Reheat if needed and serve.
