banana & coffee muffins

You bought a jar of instant coffee to try the Dalgona coffee ? You hated it ? That’s why I created this recipe !

For 20 muffins

Can be frozen.


2 cups all-purpose flour

1 cup quick oats (oatmeal)

3/4 cup white sugar

1/4 cup brown sugar

2 teaspoons of baking powder

1 teaspoon of baking soda

1 teaspoon of salt

3 very ripe bananas

1 cup of plant based milk

1/4 cup of instant coffee

1/2 cup vegetable oil

1 cup of vegan chocolate chips


Grease or line muffin pan with paper cups. Set aside.

Preheat the oven to 350F.

In a bowl, combine the flour, oats, sugar, brown sugar, baking powder, baking soda and salt. Set aside.

In a second bowl, mash the bananas with a fork. Add the plant based milk, instant coffee and oil. Whisk well. Add the dry ingredients and mix until a homogen. Add the chocolate chips and stir to distribute them evenly throughout the dough.

Using an ice cream scoop or two tablespoons, fill the paper cups to the brim. Bake for 22 to 30 minutes or insert a toothpick into the center of the cake. If it comes out clean, it’s done.

Let cool and store in an airtight container.
