Bye bye banana bread. Here is the apple bread! With its autumnal flavors, you will greet the banana to make way for the favorite fruit of the fall!
1.5 cups all-purpose flour
1/2 cup oats
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of salt
2 teaspoons of ground cinnamon
1 cup unsweetened or homemade applesauce
1/4 cup of plant based milk
2 tablespoons of vegetable oil
1 teaspoon of vanilla extract
1/4 cup brown sugar
1/4 cup of maple syrup
1 diced apples
1/2 cup coarsely chopped pecans
Preheat the oven to 350F.
Grease and flour a loaf pan or cover with parchment paper. Set aside.
In a bowl, combine flour, oats, baking powder, baking soda, salt and cinnamon. Set aside.
In a second bowl, combine the applesauce, milk, vanilla, oil, brown sugar and maple syrup. Mix well. Add the dry mixture to the wet ingredients and combine well with a whisk. With a spatula, incorporate the apple cubes and pecans.
Transfer the dough to the bread pan and bake for 1 hour - 1 hour 15 minutes.
The bread is ready when a toothpick stuck in the center comes out dry. Allow to cool then unmold.
